Elote Cafe & Catering in Tulsa, Oklahoma is a Mexican restaurant known for locally-sourced ingredients, organic meats, and environmentally friendly practices.
Elote is a Mexican restaurant, located in downtown Tulsa. Elote is working to not only bring great food to Tulsa but also to do it in an environmentally friendly way.
Founded in 2008 with a small staff of just five employees, Elote has become a favorite small lunch spot in the Deco District in Tulsa. They also host community events including Salsafest, Chihuahua races, Cinco de Mayo, The art Alley, Drag Brunch, and Lucha Libra wrestling.
Elote is leading the way with sustainable practices such as recycling, composting, locally sourced food, and more. They are a great example of a small business in Oklahoma helping the planet and the community.
Having an eco-friendly business is something that is important to owner Libby Billings. Her past experiences working in restaurants really shaped the way she is running her own restaurant.
“It is important to me that Elote is an eco-friendly business because I want to see future generations enjoy nature the same way I did growing up here. I have worked in lots of restaurants and seen how wasteful the food service industry is. Little things like composting, recycling, and using biodegradable to-go products can have a huge impact on the volume of people we serve.”
My personal favorite item on the menu is Elote’s Puffy Tacos. They come with your choice of chicken, beef, pork, or vegetarian and are topped with delicious caramelized onions, lettuce, pico de gallo, cheese, and cream fresca.
Billings told us that her personal favorite is the Veggie Burrito. “It’s my comfort food. I am a lifelong vegetarian (this is what happens when you are raised by hippies) and I am often disappointed with vegetarian options here in Tulsa. I love that our Veggie Burrito is a filling meal that even a meat eater could eat and feel satisfied.”
Elote offers a lot of great vegetarian options that are perfect for anyone that is always vegetarian or someone just trying to reduce their meat intake. Billings said “going vegetarian, even if it’s just 1 day a week, makes a huge impact on our environment. I think practicing “Meatless Mondays” is a great idea.”
Billings shares Green Oklahoma’s passion for supporting locally-owned businesses as well. Elote sources a lot of local ingredients which is not only better for the environment but is also better for the local economy.
“It is important to support locally owned restaurants because the money you spend there is staying in our economy and the tax dollars are staying in our city. Also, It is easier to make an impact with a local business owner than to try to track down their corporate office in another part of the country or world.”
