I’ve seriously been craving some chicken salad. I’m pretty sure it’s the barrage of Subway commercials advertising their version. As with most things, I can make it better.
That’s not arrogance, it’s the truth. I’ve perfected mine over the years. I use fresh organic ingredients and make my own mayo. I swear I’m not crazy. Don’t worry, it doesn’t take very long and it’s really simple.
How to Make Chicken Salad with Grapes
This recipe is great for leftover chicken or rotisserie chicken, which cuts down on the time needed to make this recipe. You can also cook your own chicken and shred it, you’ll just want to make sure it’s cool before making the chicken salad. You’ll also want to season it unless you already have and are happy with those flavors.
Once you have your chicken you will need to chop celery, nuts, apples, and grapes. For the nuts, you can really use any kind you like. I often use almonds, walnuts, or pecans. With the apples and grapes you can use any type that you like.
You will then mix your chopped ingredients and your shredded chicken. Then just add your homemade mayo and you are all done.
I recommend that you cover and refrigerate for an hour or more to let the ingredients meld well. When you’re ready to serve spoon into romaine lettuce “boats”.
I generally don’t eat grains but I’ll be honest and tell you that when I was at the grocery store these butter croissants in the bakery were speaking to me. I couldn’t resist and I made a little sandwich. You can also make it into a wrap, there are even a lot of great low carb and grain-free wrap options out there now.
Whatever way you serve your chicken salad it’s sure to be a hit!

Chicken Salad with Grapes

The perfect summer chicken salad recipe packed full of flavor and simple to make.
Ingredients
- 1 lb. cooked chicken (shredded and cooled)
- 1/4 teaspoon garlic
- 1 teaspoon poultry seasoning
- 1 tablespoon rosemary
- 1/4 cup grapes
- 2 medium apples (any kind)
- 1/2 cup nuts (any kind)
- 1 stalk celery
- 1/2 cup homemade mayo
- salt and pepper to taste
Instructions
- Season shredded chicken with salt, pepper, rosemary, poultry seasoning, and garlic.
- Chop the nuts, apples, celery, and grapes.
- Combine chicken, nuts, apples, celery, and grapes.
- Add in mayo and stir until combined.
- Taste and add more salt and pepper if needed.

I LOVE cooking with coconut oil! I use it to cook eggs and veggies in for breakfast. It’s also great to use in stir fry’s. You can use it in place of butter or oil in anything but those are some of my favorite ways to cook with it!

I won’t judge you for buying the mayo! I’ve been making it for years and just recently started making my own mayo! It’s definitely better homemade but still delicious either way! Maybe one day you’ll give it a try? It really is easier than you can imagine and it only takes a few minutes!
